I can only guess that dude is for the most part, and almost completely dead, but that the repeated jerking motions of his head are the result of the final neurological charges resulting from the damage from most of his brain being blown out.

Yeah it's incredible but you can be unconscious with eyes open and gasping. These are final agonal breaths aka autoresuscitation initiated by the brain stem which controls breathing.
