All organs including the brain must be examined during an autopsy and checked for any pathological changes or injuries regardless of manner of death as it can help in further investigations as to the cause of death and this is no not a waste of time as it is common to find disease or interesting pathology in cases of accidental or violent death.

Regarding maggots they are quite common on rotten corpses worst was possibly a totally melted guy with hundreds of maggots eating him from head to toe.

Covid virus only lives and can survive in a living host so a corpse with covid is harmless.
