Thaw for 3 days. Remove head and cut open torso; remove insides of body cavity. Remove hands, forearms, arms. Remove feet, legs, thighs. Remove cock and balls. Fill body cavity with aromatic vegetables and herbs. Brush flesh with butter, season with salt and pepper, and roast at 350F for 8-10 hours, covering flesh with aluminum foil for the last 2 hours to prevent over-browning.
