Any Butchers want to talk?

I'm looking to talk to a butcher about the whole process. Someone who is patient with my questions and willing to just chat for a while. The very few people i have met wanted no questions asked and wanted to meet right away. I am especially interested in the sport of butchering alive. And yes, I know it degradates the meat.
