I love cooking, I noticed other dudes here like decent healthy food too so I open a thread in Off-topic for all our culinary adventures.

I primarily cook typical Bulgarian meals but I sometimes prepare chineese recipies, also Greek and some Italian.

We risk getting fatties like this cute bear and developing tummies but life is fucking short so enjoy.

Today I made "Chicken with Gabbage".

That looks good I really like cabbage. I made calamari but all I had to do was heat it up. I don't like seafood with lemon the way it is in this picture from the internet. I like butter or sauce.

I know it looks so disgusting but the calamari pieces are small and just look like small tubes, they taste good but can be rubbery. I can't eat octopus because it just looks like octopus and I get grossed out looking at it.

That sounds delicious, I saw a chef make onion soup on tv and it looked so tasty. They put cheese on top. Codfish is tasty too. My mom cooks it but I never have myself.

Live octopus is like.. the most fun thing to eat because it's like... alive!

All you have to do is swallow it so the taste doesn't really matter. Then it can die painfully inside you.

Octopi produce an ink as a defence mechanism, made from melanin which can be toxic in large amounts. They also smell.

I don't think you would be able to swallow one bit of this shit.

Care must be taken to boil the octopus properly, to rid it of slime and the smell, as well as any residual ink.

All home-made, its like some fucking classy restaurant here. My sis told me she envied me I could cook so well and prepare so many things.

These "locals" are known as shopi to this day.

Mackerel is delicious but it's got to be really fresh - in our supermarkets it's often old and rank, so I don't buy it, but when I can get it freshly caught it's my favourite fish.
Tonight I'm just having puy lentils cooked in chicken stock, with brown rice (I'll flavour the rice with turmeric) and cabbage

Mackerel is deeply frozen here in shops as the sea is far off. I hear that makes it lose most of its beneficial qualities.

Still good for you - lots of omega oils. But does not taste so good as really freshly caught. Best mackerel I ever had was in a cafe by a harbour in Wales - caught off the pier that morning, grilled at lunchtime.

Its 15'C I walked naked today and the doors were open.

I', in England, but close to Scottish border. It was mild (10-12C) till a couple of days ago, but there a dusting of snow last night. Sunny and not too cold today, but a hard frost tonight.

You guys are gourmets compared to how we eat here in the USA !!!

We eat lots of frozen dinners we microwave and buy pre-cut, pre-washed salads and canned soup which we just put milk or water in and heat up in microwave, too.

We Americans don't like to spend time cooking..or we go to huge buffet restaurants where we can get anything to eat....sirloin steaks, chicken, spaghetti, salads, sea foods, all kinds of breads, deserts.

We Americans are very lazy and don't like to spend time cooking or washing dishes.

We here can even have meals prepared and brought to our doors !!

Lots of Americans just go out and buy hamburgers from McDonald's or Burger King's..
or go out and eat pizzas, have them delivered, too.

this is my favorite dish. it's called "锅包肉". it is crunchy on the outside and tender on the inside and it tastes sour and sweet. this dish is very very hard to make. i think it takes a professinal to pull it off. first, you cut the meat into thin slices then you wrap it up with a paste of flour and eggs then you fried it in the oil. it might sounds easy to you guys, but there's lot more to it than just using the right ingredients. the fire is also very important. it has to be moderate. a little more or less than that will spoil the dish. in addition, the ingredients must be used in the right amount or it ruin the dish too. i once tried to make the dish following the instructions given by a cook book but i screw it up...even dog turned away from it.

Today I cooked the following:

- 1 piece of steak, done. (And I never cooked steak befroe, so that was a surprise it went perfect in one go)
- Creamed spinach
- Boiled potatoes.

The steak was seasoned with garlic powder, to enhance the flavor. The rest was cooked without salt added.

They don't they sell these at shops, all are home made. So we will travel away from Sofia to my granny's place, some 90 km away where she will prepare it for us.

Only grannys and professional cooks now how to do it.

Today I made bacon, seasoned with non-salted spices.
Creamed Spinach and boiled potatoes, no salt added.

Very tasty and yummy :)

You leave near the sea, is there a lot of fish in the supermarket?

In Bulgaria, people on the black sea coast eat a lot of fish, fresh from the water but in areas like Sofia, in the middle of the Balkans all fish needs to be refrigerated.

Too bad fruit contains alot of Kalium.

Kalium is excreted by the kidneys as a byproduct. Because my kidneys do not work correctly, Kalium will be released into my bloodstream, instead of being peed out.

Too much Kalium in the bloodstream, will change the rhythm of the heart, sending it into disharmonious beating.

And maybe cause me to have a heartattack!!

Great to see that several of you here enjoy cooking...as I do. It's hard to cook for just one, but it's worth it. I am just now really discovering fish. I've always been a fisherman (my favorite pastime) but never liked eating them. I always preferred red meat and chicken. I didn't know what I was missing!

I had a massive coronary at age 35. I had three stents placed in my heart. Unfortunately (for me anyway), I will be here on CDG soon enough. Nobody has a massive heart attack in their mid-thirties and lives to be an old man...even with exercise and eating well, it's pretty much check mate, game over already. LOL

I still eat everything I like...and lots of it! I'm not much on portion-control. At least I finally quit smoking last summer. I was a 2 pack a day (non-filtered) smoker for almost 7 years after my heart attack.

Meatpie, you could be a chef here in America (and I'd bet in Bulgaria, too). Your food looks absolutely delicious. I really admire how precise and artistic you are with everything...it shows in everything you do. Very lucky sister who gets to spend time with you and eat all of your wonderful food creations too! That salad, pizza, spaghetti, fried pumpkin has made my mouth water. And let's not forget your abilities with a camera. You are a true Renaissance man. Is there anything you don't know how to do?

I do a lot of gardening--both flowers and vegetables. I'm going to try to grow most of my own vegetables this year. Does anyone here grow many of their own vegetables?

I will post some pictures of my cooking efforts when I'm allowed. In the meantime, I hope all of you will keep posting pictures and descriptions of your yummy culinary creations.

Ingredients


2 precooked chicken breasts, diced
1 (10-ounce) bag romaine hearts
1 English cucumber, sliced
1 cup chopped kalamata olives
1/2 medium red onion, diced
1/2 cup red wine vinaigrette
1 teaspoon Greek seasoning (recommended: Spice Islands)
1/2 cup crumbled feta cheese, plus extra for garnish
3 Roma tomatoes, sliced, for garnish

Directions

In a bowl large enough for tossing salad, add diced chicken breast.
Chop the romaine and add to salad bowl. Toss in the cucumber, olives and red onion and set aside.
In a sealable jar or container with a lid, combine red wine vinaigrette, Greek seasoning and crumbled feta cheese. Seal lid and shake vigorously.
Pour dressing over salad and toss to combine. Divide among chilled salad plates and garnish with extra crumbled feta cheese and sliced tomatoes.

Amazing, I admit that I thought baklava was only popular in Eastern Europe, Turkey and parts of Asia.

I made delicious pita pizzas but they are very fattening so I avoid it. Wow Rick, if one day we manage to meet in real life I think we will make awesome cooks.

A few years ago I had a boyfriend Alexander and we were both students, basically not a lot of money so I would cook cheap meals at home and invite him over.

It's actually a recipe from our country, very similar to a hamburger, just that, these are normally made on a Van, poorly-made stands or miserable stands like this one..

But still! Its taste is so good I would like you to try it, I'm sure you will all love it, and it'd take 15 or 20 minutes to make one. Here's how to make one:

You'll need:
>1 1/4 lbs ground beef chuck
>1 medium onion, finely chopped
>1/2 of a large red bell pepper, diced
>2 garlic cloves, minced
>1/3 cup chopped cilantro
>1 tsp dried oregano
>2 tsp soy sauce
>1 T worcestershire sauce
>salt and pepper shopping list
>4 good quality hamburger buns, split
>2 cups thinly sliced cabbage
>1 carrot, coarsely grated
>1 small red onion, cut into rings
>1 tomato, sliced 1/4 inch thick
>2 T ketchup
>2 T mayonnaise
>1 T yellow prepared mustard

How to make it:

>Mix together beef, onion, bell pepper, garlic, cilantro, oregano, soy sauce, Worcestershire sauce, a pinch of salt and pepper.

>Form into 4 patties.

>Heat a large griddle or 12-inch heavy skillet over medium heat until hot, then lightly toast buns.

>Oil griddle or pan, then cook patties, turning once, about 8 minutes total for medium rare.

>Transfer to buns.

>Mix together cabbage, carrot, and a pinch of salt. Then cook on same griddle turning occasionally, until slightly wilted, about 2 minutes. Divide among burgers.

>Oil griddle again, then sear onion and tomato, turning once, until slightly charred, about 2 minutes total. Divide among burgers.

>Stir together ketchup, mayo and mustard, then top burgers with sauce.

Then you'll be able to enjoy this

I made an awesome Kavarma kebap yesterday, it took me two hours to prepare but it was worth the wait as it turned out absolutely delicious, whole family ate and everyone like it a lot!

:drunk: And a glass of quality red wine to keep you horny and warm in mid-winter, we are fucking freezing here, cold as a morgue fridge right now.

I avoid fattening stuff like pies, I want to be lean yet is so hard as I love cooking.

How to make:

2 pounds small zucchini, peeled and diced
1 tablespoon extra-virgin olive oil
6 tablespoons full-fat plain yogurt
2 cloves garlic, very finely chopped
Juice of 1/2 lemon
Salt to taste


2 scallions, chopped, and 2 tablespoons fresh dill



1. Place the zucchini in a large saucepan of boiling water and let continue to boil until very soft and easily squashed with a fork, about 20 minutes. Drain in a strainer and press down with the back of a wooden spoon to squeeze out any liquid.


2. Transfer to a medium-size bowl and mash with a fork, then stir in the olive oil, yogurt, garlic, and lemon juice and season with salt. Arrange on a platter and refrigerate for 1 hour before serving cool or at room temperature.

I made some slow cooked Malaysian curried beef short ribs the other day. So yummy as well. Great on white rice with a side of cooked cauliflower in butter with salt and cracked black pepper ;)

2 onion, sliced
½ lb. bacon or ¼ c bacon grease
2 tsp. salt
1 tsp. pepper
1 tbsp. paprika
2+ c. chicken stock
4-5 lb. chicken, cut up. I like to use thighs
1 pint sour cream
*Roux to thicken sauce
Brown onion in bacon grease and remove from pot. Mix seasonings. Add chicken and brown 10 minutes. Add chicken stock to cover meat and browned onions. Cover and simmer until tender. Remove chicken. If desired thicken slightly with roux. Add **sour cream to the drippings in pan and mix well. If more gravy is desired, add more chicken stock.

Serve over spaetzle or wide egg noodles.

*Roux
1/2 c. melted butter
1/2 c. flour
Combine well and let cook until light brown in color and has a nutty smell. Do not overcook. Use for thickening many sauces.

** I like to let the pot cool a bit before adding sour cream.

I made an incredible dish somewhat improvised but whole family loved it!

Potatoes, yellow cheese, homemade pickled cucumbers among other ingredients topped with salami...:facepalm:

I wasn't even sure how it was going to turn out as I haven't done anything like it before...but to my surprise even my father loved it

He generally only eats food specially prepared for him by mom :too hard to take:

Well for brunch, I steamed up some sticky rice with Albacore Tuna coated in spices and Teriyaki and served with steamed Gai-lan, covered in Oyster sauce.

Right now I'm cooking a small pre- midnight mass feast a few family members who will be here soon. Ling Cod blackened with ground mixed pepper and chillis, and coated with Kasu Saki base. For veggies I have oven fried potato wedges, coated with olive oil, cayenne and fresh ground pepper and sea salt, with onion halves soaked in Worcestershire sauce and lemon juice. In the steamer are mixed veggiea and more Gai-lan. It will be about an hour before I actually cook it with a planned late diner of 9:00p.m. For appetizers I have Indian Candy (maple cured hot smoked salmon) cold smoked Albacore and spring salmon, plus a wide selection of cheeses. It will be delicious!

Breakfast tomorrow, maybe smoked oysters, raw in the 1/2 shell oysters, on crisp flat bread with cream cheese.

It's morning here on Christmas day!

No Meatpie, only 8:15 p.m. Christmas Eve, the family should be dropping in soon, I told them 8:30 (my sister, her 2 adult giirls and their respective husbands) The entire Clan will gather again early in the afternoon at the family plot to make offerings to our elders then we will go to my youngest brother's for Christmas Diner. Traditional turkey with stuffing, mashed potatoes, Brussels sprouts, squash, steamed veggies and finishing with a flaming Christmas pudding. The young adults become the designated drivers to get us old drunks home safely. More than a little single Malt Scotch, barley wine, and overproof rum will be consumed. That starts at the grave side where we pour a good dose of Scotch over Dad and Grandpa's stones, and rum for Mom and Granny. We will let some soak in then fire some more off.

I have to go, and wipe out my history since I suspect one of my nieces will set-up a video link with her sister-in-law in Mexico.

Chicken and bacon. Put it in an awesome sub with fresh baked bread, two types of cheese, veggies, and a medley of greens.
Nothing else consumed today required cooking.
